I second the VTC courses, the structure of the chinese classes looks pretty solid: I found a language exchange buddy that now became a good friend trough geoexpat language exchange forum.
CUHK offers night classes for Cantonese or putonghua. I took the putonghua classes there and the teachers were all from the north, so was definitely worth it. Never taken them myself, though I have been thinking about doing their Mandarin courses. Took me 10 years in HK to get decent at it order food, haggle at markets, ask basic stuff etc.
Once things get real fast i get lost though. I moved away and have been visiting every two years so it's good practice. So yeah, stay longer i guess lol. I have been looking to learn as well.
Mostly I have just searched and found some places in the city that offer classes but I am unsure of how good they are and they seem expensive. This only works if the girlfriend has poor English. If her English is fluent, that will be the language used every time. Well I'm pretty sure my child will be fluent. This strategy didn't work out for me as everyone seems to want to either learn English or gets all crazy when I can reproduce all the sounds like I was born here.

Causeway Bay has one of the highest rents on the planet, and is a bit more polished and modern than its Wan Chai counterpart. Beneath the surface there is more than meets the eye — find boutique stores in the above ground floors of Wan Chai especially has experienced a modern revival in recent times, with an influx of trendy restaurants and bars around the Star Street area.
